How does pot roast chili sound, a dish so thick it's served on a plate instead of a bowl, like soup?
...made with brisket, braised in beer, till it's all soft and stringy, fresh chili peppers and garden herbs, couple of secret ingredients just to round the hot stuff out, all served up on a china plate with a side of rice and turtle beans.
Thirty years ago, I entered it in the Washington Children's Hospital Chili Cook-off, sponsored by James Brady. It was the only pot the judges all gathered around to taste and discuss and the only pot from which they ate a bowl, once the judging was finished. One of its ingredients was fresh coriander, which at that time was available only in ethnic markets. And even most of the judges did not know what it was. Three years later it was everywhere. This is a special chili people. Unlike any you've ever tasted.
