I had a really good and productive day today! I made a batch of Chocolate Zucchini Muffin Cakes and thought I’d share my happiness. Anyone need a hug and a healthy sweet treat? All it takes is 30 minutes!
Here goes…
½ cup unsalted butter melted and cooled
½ cup white sugar
½ cup brown sugar
½ tsp. salt
1 egg
Mix all together in a bowl. I don’t bother with a mixer. I use a wooden spoon and mix by hand.
Add ½ tsp. vanilla
1 cup finely grated zucchini (about the equivalent of a medium zucchini peeled)
3 tbsp. sour cream
Blend gently incorporating all ingredients together.
Add 1cup flour
¼ cup unsweetened cocoa powder
½ cup chocolate chips
When all mixed in, pour spoonfuls on a 12 count greased muffin pan. Bake about 15 – 20 minutes at 350 degrees. Cool 5 minutes before removing from the pan.
Serve warm. Very moist and delicious!

Re Zucchini:
I ate a chocolate zucchini once. I think it was around Easter time. I think it was a zucchini, anyway. Delicious! No, wait....now that I think about it, it wasn't a zucchini; it was ,um, something else. On second thought, that wasn't chocolate, either. Still, though, it was delicious!

Y' don't care much for zucchini? It's the zucchini that makes the muffin moist and gooey! I promise, you won't know it's loaded with z's if you don't like em.... you could probably replace with carrots but I doubt it'll be gooey yummy because carrots are dry compared to zucchini :-)
