With her husband of 14 years, Justin, they co-founded the Gluten Free Foundation in 2006, www.jackshouse.org, a non-profit foundation aimed at increasing awareness of the benefits of living gluten-free. Karen and Justin are the proud parents of two young sons, ages 4 and 6.
Karen’s publishing history includes two children’s books and numerous trade journal and newsletter articles. She currently serves as the copywriter and editor for the Gluten Free Foundation website, as well as the author of her blog, www.momcooksglutenfree.blogspot.com. In between her two college degrees, she wrote articles for trade magazines while flying search and rescue helicopters as a pilot for the United States Navy. She has been featured in several local San Diego NBC television interviews about her books. As a member of the Celiac Disease Foundation, she has been a featured book-signing guest at the Celiac Disease Foundation Annual Food Fair and Conference in 2007 and 2008.
