So, Mike and I have been visiting my brother and his family, who live just outside New York City, and yesterday we went in to visit our friends Rob, Jodi, and Rob's partner Brady. We braved the crowds on Fifth Avenue (and I quickly came to the conclusion that I will never walk down that street again by choice), glimpsed the tree in Rockefeller Center (looking a bit sad and spindly—I guess it looks better at night), and had many adult beverages. After my brother picked us up at the train station, we went home and I discovered my niece had made cookies.
Oh. Oh my. They were amazing.
I have to share the recipe. It comes from PETA's Vegan College Cookbook, which my niece received as a Christmas gift because, next fall, she'll be in college and needs to learn to fend for herself.
They're called PB Bombs:
- 1 cup vegan margarine
- 3 1/2 cups powdered sugar
- 2 cups graham cracker crumbs
- 3/4 cup peanut butter
Melt the margarine in the microwave—about 90 seconds—then mix everything together in a big bowl. Using your hands, roll the dough into golf ball-sized cookies. Chill in the fridge before serving.
Yes, I know this blog post has nothing to do with writing, but let me tell you, the sugar rush is intense. Actually, these may become my snack of choice while writing—in which case I will need to reinforce my desk chair....
