My Favorite Christmas Recipe

Every year I have a new favorite recipe for the holiday season. This year, it's an easy to make, filling cake that is delicious anytime, including breakfast, and has several variations, all delicious.

1/2 cup butter softened

1 1/2 cups packed brown sugar

 3 large eggs, or use egg substitute or about half a cup of applesauce (cake will be very moist with applesauce)

2 cups canned pumpkin

1 tblsp cinnamon

1 tblsp nutmeg

1/2 tblsp ginger

1/2 tblsp cloves

1 and 1/2 tblsp baking soda

1 to 2 tblsp vanilla

1 and 1/2 cups white flour

1 and 1/2 cups oatmeal

(Please note: I love food well spiced, so if the amounts of spices above seem extreme, feel free to reduce.)

Preheat oven to 350ºF. Coat a 10- X 15-inch baking dish with cooking oil. Using an electric mixer, in a large bowl, cream butter and sugar until light and fluffy. Add eggs, vanilla and pumpkin; beat well. Add salt, pumpkin pie spice, flour, oats and baking soda; mix thoroughly. Pour batter into prepared baking dish and place walnut halves on top so there will be 1 walnut in the center of each piece of cake. Bake until a toothpick inserted in center of cake comes out clean, about 40 to 45 minutes. Cool in pan and  cut into generous pieces.


This recipes lends itself to many variations. Add nuts. Add chocolate bits. For Christmas, add Use different spices, such as allspice and cardamon, even pepper. You can also frost the cake with vanilla frosting and dust with colored sugar, festive! Or when first out of the oven, cover with a thin layer of chocolate chips, yum!
